Mexican Corn Bread

Description:
My guys always love this with soup in the winter or just with white beans and turnip greens!!!

Ingredients:
3 cups cornmeal
3 tablespoons sugar
1 tablespoon salt
1 1/2 cups grated cheddar cheese
1 cup vegetable oil
1 large onion, chopped
1 1/2 cups milk
3 eggs(beaten)
1 small can whole kernel corn
3 pods jalapeno peppers(chopped up)


Directions:
While preheating oven to 400 degrees, grease iron skillet and set in oven to get hot.   This will make the corners of the cornbread crunchy.  
In a large bowl, combine all the above ingredients. Pour into a greased, hot, iron skillet and bake for about 30 minutes in a 375 to 400 degree oven.
